This coffee begins, fully natural, harvested at its peak, when cherries are full of their honey-like liquid. The beans begin the drying process while still on the tree. The next step, the cherries are transferred to a patio until the honey is mostly dissolved. The final drying phase is finished in a dryer to insure the beans are stabilized and contain the proper moisture content.

Cupping Notes: Full bodied, ripe fruity aroma, stone fruit flavors of blueberry and plum, reminiscent of a fine wine. Clean, caramel and fruit, smooth finish.
